This session ale is laser-focused on its bright, Galaxy and El Dorado hop profile with a dry, lightly bitter finish and a soft, delicately bubbly body.
This is classic, old-school Chablis made in collaboration between Bernard Raveneau and Kermit Lynch from a single vineyard using organic Chardonnay. Such an inviting and interesting nose of lemon-citrus, oyster shells, wet stone, apple, forest foliage and just the tiniest whiff of biscuit. It is enthralling as it builds on the palate and the subtleties start emerging — chalky minerality, lemon-citrus, foraged mushrooms, nuts and green-apple notes. It has the depth and acidity to evolve and deliver pleasure for many years even if it is, after all, a village Chablis.
A well-balanced blend of 58% Pinotage and 42% Pinot Noir combines the brighter cherry notes of the Pinot underpinned by the earthiness of Pinotage in a plush medium-bodied palate; juicy, with well-managed oak and a solid close.
Medium gold with an inviting nose of pears, apples and burnt sugar. Full-bodied, at the apex of maturity as the melon and white peach flavours start to become more austere and complex. The long finish is dry with an interesting trace of bitterness. Excellent with a Waldorf salad.
Interesting aromatics reveal damson plum, cinnamon, clove and herbal scents, shifting to sweet ripe red fruits in the mouth. Medium weight, nicely balanced with lingering plummy and spicy notes on the finish.
Tropical fruits, apples, minerals, tomato vine and minerals are all in the mix here. Light bodied, with a bright edge, there is medium length and a mineral after note. This wine needs food, so try it with bruschetta topped with feta cheese or herb and lemon marinated pork chops.
