True to its name, this ale shows dark ruby red in colour, with a persistent creamy head and nutty, lightly toasted aromas. Sweet dried fruit with a splash of coffee-chocolate emerge on the palate, finishing with balancing bitter hoppiness. Has a lot more personality than traditional Irish red ales.
Bright blueberry and Five-spice infuse the gamey, savoury aromas. The dense, rich palate showcases well the concentrated raspberry and black cherry flavours. French oak barriques (50% new) imbue structure and fine-grained tannins. Long, complex finish satisfies. Serve with game meat in fruit sauce.

Such an expressive nose of blackcurrants, cracked peppercorns, earth, garrigue, lifted floral notes and smoky-savoury spices. It’s highly structured on the palate with thick, dark fruits, pepper and spice with grippy tannins through a long finish.

Sebastien and Emeline Bobinet are in high demand for their low-interventionist wines (all the rage in Paris, London and the like), so to have a few cases on our shores is a big win. Stock up! The couple organically farm 7 ha in Saumur (along with their horse plow) and with vines ranging from 25-80 years of age. Wild yeast-fermented, sans additives, and aged in old 300 litre wood before being bottled unfined and unfiltered, this lays on a clay and herbal base, creamy with wild herbs and a cut of anise. Very light waxy, hazelnut, yellow plum throughout the flow to the pithy finish. This lacks Chenin's shearing cut of acid, but shows up with a honeyed, dense form to impress.
