Traditional method Blanc de Blanc, 100% Chardonnay. A stream of fine bubbles and gentle mousse, aromas of brioche and orchard fruits followed by a well-structured palate of citrus, green apple and stone fruit, with generous but still lean mouthfeel underpinned by excellent acidity through a persistent finish.
A blend of Cabernet Sauvignon, Merlot and Syrah, with approximately 8 months in barrel, this shows fine berry fruit with refined cinnamon and clove spice, rounded body with softening, though still somewhat firm tannins, brisk acidity and plenty of fruit, spice, and a touch of chocolate on the finish. Give it another 3 to 5 years in the cellar.
Clear medium-deep plum red. Medium-intensity nose of blueberries and raspberries robed in cedar. On the palate it shows red berries and some herbaceousness, with tannins still prominent but in decent balance. Not from the best of vintages, but this will last another year or 2.
Bold, dark, ripe and rich with loads of fresh blueberry, blackberry and red plum. Herbal and savoury, big fruit-enveloped tannins, structured, mouthfilling, plush, with a bright acidity and long, powerful finish. Ideal with bison, elk or other wild game.
100% Pinot Noir sparkling made in the ancient method (pét-nat) and bottled with 22 g residual sugar during primary fermentation, forgoing any additives or stabilization. A bready/yeasty entry with rich apple, muted citrus and a lovely floral note on the nose. It’s bright and energetic on the palate with a persistent mousse and flavours of citrus rind, tart apple and toast that all lead to a fresh and finessed finish.
A solid, characteristic Chianti with cherry and warm, spicy flavours backed by lightly firm tannins, a good acid balance and a dry, food-friendly finish.

Clean and compact, lean and bright, and perfect with simple clams.
