The Ancestral is one of the first wines to disappear off the shelves at Hinterland. Pure fruit on the nose — red berries and red currants and strawberries and rhubarb, oh my, what a fun sparkling wine on the nose and on the palate. Yes, it’s sweet, but it’s a balanced attack of sweetness. I dare you to put your glass down after one sip.
The peachy yellow colour heralds the cold cream, mango, apricot, rose, grapefruit and spice. The palate is ripe, round and intense and shows pleasant acidity, which provides relief from any heaviness. The finish is long with a light sweetness. Pick your choice of Asian cuisine to enjoy with this beauty.
Shows aromatic intensity with typical Cabernet blackcurrant, leafy herbal and minty overtones and an uncharacteristic scent of blueberries. Dark fruit flavour suggests blackberries, though, with firm tannins, dark chocolate and a hint of mocha.
If you enjoy mature elements in your bubbly, this wine will fall smack-dab in your wheelhouse. Yeast, caramel, bruised apple, honey, dried flowers and caramel flow out of the glass. Crisp, with creamy bubbles and long lasting.
Ruby/garnet. Red fruits and green pepper on the rather shy nose. Firm and full in the mouth, its compact body shows 5 to 7 years’ aging potential. Will improve and become more complex if you’re patient.
This Cab Sauv–dominant blend gets care from hand-picked, hilltop fruit and attention from 18 months in new French oak. The result is fragrant aromas of red berries, blackcurrant and chocolate, accompanied by a creamy mocha texture, supple tannins and a polished, earth-toned finish. Pair with lamb stew.
Small-batch English ciders are rare in Canada, so it's a delight to drink this Somerset sparkler. Made with juice pressed from British heritage cider apples that cidermaker Neil Worley sources from orchards around Somerset and then presses himself, this semi-sweet amber-hued cider has rich dessert apple flavours, a lightly sweet caramel finish, light acidity to balance and a low barnyard-like funk that makes it quintessentially British. A great cider for those who like the sweeter side of the beverage but crave a bit more complexity. Available from Ontario's Communal Merchants via private order.
