This winery, located in one of the southernmost vineyards in the world, only began operating in 2000. This 100% Cabernet Sauvignon is a lovely red with ripe black cherry, anise, campfire smoke, spice and currants on the nose. It is quite rich on the palate and a touch sweet, with plump juicy fruits, eucalypt, spice, currants and pepper.
As the name denotes, it was the ambient yeast of the winery that was used to ferment this wine. Moreover, it was aged in new barrels and given the full malolactic treatment. This has endowed the wine with toast, caramel and smoke, pineapple, honey and spice. The texture is creamy and rather full in the mouth.
A fabulous wine at this price point with a gorgeous nose of ripe peach, white flowers, toast and minerals. It’s very pretty in the mouth with mellowed stone fruits, subtle minerality and persistence through the finish. Pair with scallops or grilled trout.
Light ruby. Fresh red fruits (cherry, raspberry) with a light touch of spice and green pepper. Slightly vegetal on taste but there is also a lot of red fruit. Supple texture, light- to medium-bodied and good acidity, turning sharper in the finish. Great with grilled red meat.
Kudos to winemaker Jean-Pierre Colas for turning in this top-notch Cab Sauv! Mint, cassis, cinnamon, violets, earth and vanilla are all in play in this full-bodied red. Still youthful and tannic, it requires some cellaring to let it express its full potential. Drink from 2020-2028.
