20 Sorrel leaves - the stems removed 3 ts Butter 3 Eggs 2 tb Water Salt Freshly milled pepper 2 tb Cream CUT THE SORREL LEAVES into strips, melt half the butter in an omelet pan and cook the leaves until they have wilted and turned a gray-green color. This will take just a minute or two. Lightly beat the eggs with the water, season with salt and pepper, then stir in the sorrel. Melt the remaining butter in the omelet pan and when it is hot, add the eggs. As the edges cook, pull them into the middle of the pan with a fork, tilting the pan as you do so that uncooked eggs will flow into its place. When the eggs are cooked, fold the omelet in thirds and turn it out onto a plate. Return the pan to the fire and add the cream. Bring it to a boil and let it reduce enough just to thicken slightly. Make a slice down the center of the omelet, pour in the cream and serve. |
1 c Sourdough Starter (see Previous Recipe) 1 c Lowfat soy milk 1 1/2 c Whole wheat flour 1/2 t Baking soda 1 t Baking powder 1/2 t Salt This recipe can be used for either sweet or savory waffles. For a delicious breakfast or dessert waffle, add either 1 cup fresh or frozen blueberries or 1 cup peeled, diced peaches, slightly crushed. You do have to prepare part of this recipe the night before for the starter to work. Mix sourdough starter, soy milk, and 1/2 cup of the whole wheat flour. Cover and let stand at room temperature for 12-24 hours. When ready to cook, add the remaining 1 cup whole wheat flour, baking soda, baking powder, and salt. Heat waffle iron, pour in the appropriate amount of batter for your specific model, and spread to the edges of the waffle iron. Close and cook until gently browned. 1/2 c Packed brown sugar 3 tb Flour 1/2 ts Nutmeg 2 tb Margarine 1/2 c Chopped pecans 2 cn Yam, drained (17 oz) 1 16 oz can peach slices,drain 1 1/2 c Miniature marshmallows Combine sugar, flour and nutmeg; cut in margarine until mixture resembles coarse crumbs. Add nuts. Arrange yams and peaches in 1 1/2 quart casserole; sprinkle with sugar mixture. Bake at 350 degrees, 35 minutes. Sprinkle with marshmallows. Broil until lightly browned. |

4 1/2 lb Sweet Potatoes; 8 or 9 med -peeled and cut 1" square 1 ts Salt; plus more to taste 1 c Apricots; dried, loose pack -cut into 1/4" slivers 1/2 c Raisins 1 tb Vegetable Oil; Canola 1 Onion; finely chopped 2 ts Curry Powder; Madras Fresh ground black pepper Place sweet potatoes into large pot to cover by 1". Add 1 ts salt and bring to a boil over high heat. Reduce heat to medium and cook until tender but not mushy, 8 to 12 minutes. Drain well. Meanwhile in a small bowl Combine Apricots, raisins and 1 cup boiling water; let sit until plumped, about 10 minutes. In a large wide pot heat oil over medium high heat. Add onion and cook, stirring until softened, about 2 minutes. Add curry powder and cook, stirring, until fragrant about 2 minutes. Add the cooked sweet potatoes, apricots, raisins and the fruit soaking liquid. Season with salt and pepper. Stir gently over medium low heat until warmed through. 150 g Raw, smoked bacon, finely -cubed (about 5 to 6 oz) 500 g Cooked potatoes (a generous -lb), peeled and cut into Medium slices 1 tb Lard 4 tb To 5 tb sour cream Salt to taste Pepper to taste [In a skillet], melt the lard and briefly fry the onions and bacon. Add the sliced potatoes and saute until golden brown. Add salt and pepper to taste, and mix in the sour cream. Serves 4. 29 oz White Asparagus; (2 Cans) 2 T Margarine 2 T Unbleached Flour 1/2 c ;Asparagus Liquid 1/2 c Milk 4 oz Ham;Cut into Julienne Strips 1/8 t Nutmeg; Freshly Grated 1/4 t Salt Drain asparagus spears, reserving 1/2 cup of the liquid. Heat margarine in a saucepan. Add flour; blend. Gradually pour in asparagus liquid and milk. Stir constantly over low heat until sauce thickens and bubbles. Add cooked ham and seasonings. Gently stir in asparagus spears; heat through but do NOT boil. Serve in preheated serving dish. |
