Rule the Grill This Summer

The days are getting longer, temperatures are warming up and the patio furniture is in place. This means one thing — summer is around the corner and it’s time to fire up the grill. This season, Tidings has the recipes and ideas that will add thrill to your grill to make your summer sizzle.

Sunshine? Check. Family and Friends? Check. Good Food? Check. Burgers are classic grill fare. Here are some topping tips to make even the most classic hamburger recipe stand out.

Look for buns that add something to the overall taste and look of the burger. Buns topped with sesame seeds or made with sprouted herbs and veggies add enough pizzazz to turn any ordinary burger into an ultimate, gourmet meal.

Wasabi Mayo
Mix 2 tsp each wasabi paste, fresh, chopped ginger, soy sauce, 1/4 cup mayonnaise

Pickled Slaw
Dress 2 cups prepared coleslaw mix and finely sliced red onion with a mixture of 1/4 cup white vinegar and 2 tsp sugar.

Horseradish Mayonnaise
Mix 1 tbsp Prepared Horseradish and 1 crushed garlic clove into 1/4 cup mayonnaise.

Spicy Peanut Sauce
Blend 3 tbsp crunchy peanut butter with 1 tbsp ketchup and 2 tsp chili pepper flakes.

Lime Butter
Mix the zest of 1 lime with 1/4 cup softened butter, roll into a log and refrigerate. Hint: leftover butter is great on vegetables especially grilled corn.

Mexican Fiesta: Top with guacamole, roasted red pepper and cilantro.

Southern BBQ: Top with carrots, cabbage, mayonnaise and parsley.

Taste of the Mediterranean: Top with sun-dried tomato, olive relish and arugula.

South Asian Flavour: Top with spiced yogourt, cucumber, red onion and mint.
