If wine or beer cocktails are your usual Happy Hour go-to’s, you’ll want to try this chilled mixture that’ll have you forgetting about your busy day in no-time. The rosemary sprigs, which give it the quirky name, have a piney aroma and fresh flavour that are sweetened by the pineapple juice. Prep is needed in advance, but it’ll be worth it – you’ll be ready to relax as soon as the day’s done.
The Porcupine
2 cups unsweetened pineapple juice
2 3-inch sprigs fresh rosemary
4 12-oz bottles pale ale beer, such as Sierra Nevada, chilled
1 750-ml bottle sparkling dry white wine, such as Prosecco, chilled

In a small saucepan combine pineapple juice and 2 sprigs rosemary. Bring to a boil over medium-high heat; reduce heat. Simmer, uncovered, about 15 minutes or until mixture is reduced to about 1 cup. Strain juice into a bowl; discard solids. Cover and chill for 1 to 48 hours.
In an extra-large bowl combine the strained juice, beer, and wine. Serve in wine glasses garnished with pineapple wedges and additional rosemary sprigs.
