Despite its elegance and delicacy, the wine possesses a great underlying structure, which should allow for it to continue to develop and evolve over the next 3 to 5 years. Quite versatile when pairing with food, matching with everything from a nicely prepared piece of Alberta beef to bison to duck ragout to hard cheeses.
