Scrubby Mediterranean herbs season this Languedoc red, from the limestone-laced sloped soils of La Clape. Syrah, Grenache and Mourvèdre were grown without chemicals, and picked throughout a 2-month harvest, led by the ripeness of each grape. 30 days maceration was followed by 18 months in vat, before bottling without fining or filtering. The result is a finely textured, medium-bodied, bistro-rustic red, scented with plums, wild cassis and thorns. Tannins are appropriately grippy/sticky and acidity is brisk through to the drying finish. Enjoyed with pork chops and lardon-lashed lentils.
