Sauteed Spinach and Red Peppers
1 T Olive oil
1 ts Olive oil
2 md Red bell peppers
2 ea Garlic cloves, sliced
1 pn Crushed red pepper flakes
8 c Steamed rinsed spinach
1/4 ts Salt
* Seed bell peppers and cut into strips. ** Do not dry spinach. 1. In large skillet, heat oil. Add bell pepers, garlic, and pepper
flakes. Cook stirring frequently for 3-4 minutes. 2. Add spinach, with water still clinging to the leaves to the skillet.
Sprinkle with salt. Increase heat to medium-high and cook, stirring occasionally, 3 minutes or until vegetables are tender. Each half cup serving provides: 1/2 FA and 2V.
