Fig & Goat Cheese Salad

I really love goat cheese. And all cheese, really. So incorporating it into a salad is pretty much a must for me (I admit, I’ve put cheese of some sort on the other salads on this list, just for fun). This sweet-and-savoury combo of salty goat cheese and dried figs is dynamic and fun – a great lunch dish to wake you up mid-day.

2 cups mixed salad greens
4 dried figs, stemmed and sliced
1 oz fresh goat cheese, crumbled
1 1/2 tablespoons slivered almonds, preferably toasted
2 tsp extra-virgin olive oil
2 tsp balsamic vinegar
1/2 tsp honey
Pinch of salt
Freshly ground pepper, to taste

Combine greens, figs, goat cheese and almonds in a medium bowl. Stir together oil, vinegar, honey, salt and pepper.Just before serving, drizzle the dressing over the salad and toss.

If preparing in advance: Refrigerate salad and dressing separately for up to 24 hours.
