Chi-Chi Frozen Cocktail Recipe

Coconut and pineapple are another tropical mix that is odd, but works. Plus, this one is blue. BLUE! Like the ocean. Or the sky. That’s largely why I added it to my alcoholic smoothie party list. The author/creator of this one writes “the flavour is very similar to a Piña Colada. Think of it as the blue, vodka version!” She also suggests trying one of the new coconut vodkas or other flavoured vodkas with this recipe, to mix it up a little.

I didn’t do my own version of this. Ok, I did, but it wasn’t too drastic – instead of fresh pineapple, I used frozen; also, instead of vanilla ice cream, I used lactose-free vanilla yogurt. It meant I needed a bit more ice than was called for, but I liked that my stomach didn’t get angry at me afterwards.

1/2 cup ice
2 oz vodka
1/2 oz blue curaçao
1/2 oz cream of coconut
1/2 cup fresh pineapple 
One scoop vanilla ice cream
Pineapple slice, for garnish

Put all ingredients, except the garnish, in the blend and blend until smooth. Pour into a chilled margarita or highball glass and garnish with pineapple.
