Opens on the nose with spicy red fruit showing scents of plum in the foreground. The opening theme carries through on the palate with lively red plum flavours overlaid with intriguing smoky notes suggestive of charred bacon. Finishes with stiff tannic grip. Better with another 2 to 3 years in the cellar.
Great balance with aromas of baked apple, peach and fig with a pleasant toastiness. Excellent leesy mouthfeel with an adept use of French oak that adds complexity and structure without overwhelming the delicious fresh fruit. Elegant and refined with a beautiful lifted finish. Ideal with rabbit, pork and poultry, and may even stand up to a nicely grilled steak.
This is the same concept as the Evolution, but made with the red grapes Pinot Noir, Zinfandel and Syrah. It’s like Pinot Noir on steroids with juicy cherry and raspberry fruit, spice and earth on the nose. It’s bold and peppery on the palate with a bevy of dark and red fruits and a smooth finish. Serve with veal or burgers.
Pale straw in colour with a lime tint; a bouquet of crushed elderberries with a grassy note; medium-bodied with a crisply dry, gooseberry flavour and a lemony finish.
Canada’s own Moscato d'Asti. Very pale pink in colour with a spicy, orange and honeysuckle nose; light-bodied, off-dry with orange, peach and red currant flavours backed by lively acidity. A beautifully made wine and so easy to drink.
Winemaker Angelo Pavan at Niagara’s Cave Spring Cellars is a Riesling specialist. He makes a range of Rieslings in different styles, and this introductory wine is a great bargain at the price. Pale straw in colour with a minerally, grapefruit and apple nose already developing petrol notes. It’s light- to medium-bodied, just off-dry, with a grapefruit flavour and a touch of honey. A beautifully textured wine.
A rustic nose of anise, smoke, blackberries and violets. It’s quite smooth on the palate with smoky dark fruits, savoury spices and good balancing acidity.
