Review Summary:
This is a wine that benefits from time and not over chilling; let this relax and unknit in the glass some before drinking (liberally). The pixelated minerality will spill out of the glass, carried with subtle and alluring reductive notes, pine nuts, lemon thistle, meadow herbs, quince blossom and pear skin. Etna Bianco Superiore can only come from the village of Milo, embracing and facing the sea breezes from 700 m altitude. This is 40-year-old Carricante (with 10% other autochthonous grapes) that is harvested early and spends 10 months in stainless. The finish lingers with seawater freshness and salted citrus. Serious wine; best enjoyed at cellar temperature and with octopus, scallops or white fish now, or better yet, your cellar.
