Oatmeal Raisin Cookies
When you’re craving something sweet, the ingredients for Oatmeal Raisin Cookies should be right in your cupboard. I have been making this recipe for years, and it’s quite good. For the record, I don’t have an actual sifter, which seems like a somewhat old-fashioned gadget for the cook of 2013. But rather than skip the sifting step, I simply stir the dry ingredients through a fine-mesh strainer.
Oatmeal Raisin Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups rolled oats (not quick-cooking)
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 cup butter, softened
- 2 eggs
- 1 tsp vanilla
- 2 tbsp water
- 1 cup raisins
Instructions
- Preheat oven to 350?F.
- Grease 2 cookie sheets.
- In a large bowl, sift flour, baking soda and salt. Stir in oats.
- In a separate bowl, with electric mixer, beat sugars and butter until creamy.
- Add eggs and vanilla. Beat until smooth. Stir in flour mixture and water. Gently stir in raisins.
- Drop by rounded tablespoons onto greased cookie sheets, allowing enough space so cookies can spread out. Bake at 350?F for 10 to 12 minutes or until light brown.
Drink Suggestion:
The cookies are very nice with a sweet sherry or a cup of tea.
