Lentils with Summer Vegetables
Ingredients | |||
2 | cup | lentils, rinsed, drained, any color | |
1 | each | onion, chopped | |
2 | each | carrots, chopped | |
2 | each | celery, stalks, chopped | |
1 | each | zucchini, quartered, sliced | |
1-1 1/2 | teaspoon | savory, summer | |
1 | pepper, to taste | ||
1 | garlic, to taste | ||
1 | each | bay leaf | |
5 | cup | water, or part broth | |
Directions: | |||
Put everything in a large pot, bring to a boil, reduce heat, cover and simmer about 30-40 minutes. Remove bay leaf. Serve over brown rice (or maybe potatoes). Makes 4 reasonably sized servings. NOTE: Use which ever vegetables you have on hand. Vary to suit yourself. leeks are great in this. If you'd want this to be more soup-like, add more water and a can of tomatoes, pureed. |
