Davide Guidara’s recipe for Tomato Salad

PREPARATION TIME: 6 hours

TOTAL TIME: 6 hours + 24 HOURS OF MATURATION

SERVES 4

FOR THE LIME DATTERINO:

  • 100 g of datterini tomatoes
  • 200 g of water
  • 100 g of lime

FOR MARINATING:

  • 300 g of extra virgin olive oil
  • 6 g of basil
  • 5 g of red wine vinegar
  • 4 g of garlic

FOR SOYA SHALLOT:

  • 300 of shallots, cleaned and cut into slices not too thick
  • 50 g of shoyu soy sauce
  • 150 g of raspberry vinegar

FOR THE HEART OF OX TOMATO:

  • 500 g of beefsteak tomato
  • 10 g of red wine vinegar
  • 20 g of shoyu soy sauce
  • 7 g of basil

FOR THE TOMATO WATER:

  • 250 g of lactose-fermented tomato water or tomato water (blend tomatoes for a few seconds and filter them through a narrow sieve)
  • 6 g of Worcestershire sauce
  • 25 g of extra virgin olive oil
  • 20 g of basil
  • 20 g of lentil soy sauce
  • 50 g of Wakame seaweed

Method:

FOR THE TOMATO WATER:

  • Combine all the ingredients in a jar and set aside and leave to macerate in the fridge overnight.
  • Filter and refrigerate, it can be kept for 3 days.

FOR THE LIME DATTERINO:

  • Prepare the marinade by combining all the ingredients in a bowl and stir.
  • Blanch the tomatoes in boiling water for about 20 seconds and then gently peel them, being careful not to cut them. Prepare the lime bath by adding it to the water and insert the blanched and skinned tomatoes. Soak, stirring occasionally for 1 hour, then wash them with great care and add them to the marinade. Leave them to infuse for 2 days.

FOR THE SOYBEAN SHALLOT:

  • Put all the ingredients together in a saucepan.
  • Cook over medium-low heat and bring to 85 ° C.
  • Remove the pot from the heat, remove the contents and spread everything out on a baking sheet.
  • Let it cool in a blast chiller until completely cooled.

FOR THE HEART OF OX TOMATO:

  • Prepare a marinade with the vinegar, soy sauce and basil.
  • Wash the tomatoes and cut them into large enough cubes that you will insert into the marinade.
  • Leave to marinate for 1 day.

TOMATO SEEDS:

  • Take the seeds from a beefsteak tomato and store them on a paper towel.

TO BE DONE IN ADVANCE:

Tomato water

TO ASSEMBLE:

  • Put 3 pieces of datterino tomatoes, 3 pieces of beef heart and 2 parts of seeds on the bottom of the plate
  • Put the soy shallot on top and pour the tomato water on top.
