Coconut Toastie
Glass used: Champagne flute
1 oz Light rum
5 tblsp Vanilla ice-cream
1/4 oz Whipped cream
Shredded Coconut
Combine all ingredients (except coconut) in an electric blender and blend at a low speed for a short length of time. Pour into a chilled champagne flute, garnish with shredded coconut, and serve.
