Gone are the days when jiggling the turkey leg or peering at the juices was the way to judge whether or not food was properly cooked. Now we hear that making sure the meat has reached the correct temperature is your best bet in avoiding food poisoning. With that necessary bit of information, thermometers have become an essential kitchen tool.

There’s actually a whole array of thermometers out there. So, here are some tips to keep in mind when you’re shopping for one.

First, decide whether you want one with a digital or a dial face. Digital thermometers are generally quicker at reading temperature, and very accurate, too. Dial thermometers need to be left in a little longer before they register an accurate temperature, but they will also display the ideal cooking temperatures for each type of meat.

Second, decide whether you need to buy an oven thermometer as well. Most ovens, even if they’re brand-new and state-of-the-art, register hot and cold spots. Knowing exactly what the oven temperature is will ensure more even cooking.
