Xperience: La Vinia Restaurant

La Vinia Restaurant’s motto is “Surround yourself with the passions of Spain”, and the extensive list of tapas on the menu illustrates that sentiment very well. On any night you can sit down to a sampling of fresh mussels steamed in Spanish beer, Spanish chorizo sautéed with clams and white beans, gazpacho, paella and so much more. Mmm, just imagine for a moment the aromas that no doubt waft out the restaurant’s main door onto the street each evening, seemingly transporting hungry passers-by to Spain.

The mastermind behind Toronto’s newest authentic Spanish eatery is Fernando Garcia. Both owner and executive chef, Fernando brings a lifetime of experience to his restaurant, and patrons seem to love the friendly, casual atmosphere, not to mention the fine cuisine. Fernando grew up in Madrid where his family owned a restaurant. From an early age, he began honing his culinary skills and appreciation for the cuisine of his homeland. But, Fernando wasn’t content with simply perfecting Spanish cooking. He wanted to learn as much as possible about other cuisines. He also wanted to share his own heritage with the world. After graduating from L’École Laussane, a well-respected culinary school in Switzerland, Fernando travelled through Mexico and the United States working at many of the top rated restaurants there before crossing the border into Canada. Fernando literally cooked his way across this country, from Vancouver to Mississauga and now to Toronto.

Fernando takes pleasure in educating his clients about Spain and its cuisine not only through the food he creates, but also via the Spanish products he promotes in his restaurant.
