Welcome Winter
I found myself in a bit of a quandary recently. It was the day before shopping day, which meant that the fridge was pretty bare. What to make? Digging around, I found a bag of split green peas. Winter hasn’t been too cold at all this year, but that really doesn’t matter, does it? I haven’t had a good, flavourful soup since last winter. This split pea soup would be my welcome to the winter season (even as warm as it’s been).
Split Green Pea Soup
12 oz split peas
2-3 sausage links, cooked and sliced
3 garlic cloves, crushed
1 bay leaf
3 carrots, chopped
5 cups chicken stock
Extra-virgin olive oil
Salt
Pepper
Parmesan
Add all ingredients to a large pot, except for sausage links. Bring to a boil, then simmer for 2 to 3 hours, or until the split peas have softened.
Remove and discard the bay leaf. Purée until smooth. Adjust seasoning. Add sliced sausage to the pot. Ladle into bowls and sprinkle each with about a tablespoon of parmesan cheese.
