Weeknight Meal Madness

It may be Monday, but there’s no need to rely on take out for dinner tonight. All you need are two hours to go from kitchen to table. Better yet, put these recipes together on the weekend, then the only thing to do after work is warm them up, sit down and eat.

Here we are mid-September. The days are getting shorter, the nights longer and the mornings cooler. If the thought of the coming winter gives you a bit of the blahs, think about Greece instead. Meze, like tapas, are appetizers that make up a meal. Picture yourself sitting on warm sand underneath a brilliant blue sky and gazing out at the clear water. To create a meze party for a bunch of friends on a weeknight, or a dinner made up of little bites for yourself, all you need are a few grocery store purchases and some pantry staples, like olive oil, lemon juice and a handful of mixed herbs. If two hours for preparation sounds like much too long on a weeknight, then all you need to do is limit the number of appetizers.
