Perhaps you’re wondering why Quench would post a hot lentil soup recipe now. We know it’s summer, and the weather has been hot. But, really, a hot thick soup is a perfect accompaniment to a warm August evening. You don’t need to serve it piping hot, as you might in the dead of winter. Serve it at warm or at room temperature. Serves: serves 6

Ingredients

  • 1 tbsp (15 mL) olive oil
  • 1 cup (250 mL) each diced onion, celery and sweet potato
  • 4 tbsp (60 mL) Club House Roasted Cumin & Mint One Step Seasoning
  • 1 cup (250 mL) dry mixed lentils
  • 1 tsp (5 mL) Club House Prepared Minced Garlic
  • 5 cups (1.25 L) Kitchen Basics No Salt Added Chicken Cooking Stock
  • 2 ½ cups (625 mL) water

Instructions

  1. In large saucepan, over medium heat, heat olive oil and sauté onions, celery and sweet potato for 3 minutes.
  2. Add Club House Roasted Cumin and Mint One Step Seasoning; sauté 1 minute.
  3. Add lentils and chopped garlic; sauté for 2 minutes.
  4. Add chicken broth and water. Bring soup to a boil, reduce heat and simmer for 55 minutes.
