The Quick Fix

Ok, I’ll say it — although I really do hate to admit it. There are times when the foodie in me loses the battle, and the best I can do is pull together a simple pasta and tomato sauce dish for dinner. This happens on more occasions than I care to count. (I probably don’t have enough fingers, anyway.) Not that there’s anything wrong with a simple pasta and tomato sauce dinner, mind you. I grew up on variations of that theme. I have nothing against it. It’s just that … well … let me explain.

This quick go-to dinner has degenerated into an any-time-we’re-too-busy-to-cook meal, which, unfortunately, seems to be most of the time. It used to be one of my all-time favourite comfort foods. As perfect for a hot summer day as for the coldest winter night. Hot, thick, flavourful, homemade tomato sauce stirred into best quality pasta and sprinkled with freshly grated Parmigiano-Reggiano or Pecorino. A glass of Valpolicello or Zin. Mmmmm. The sound of a little voice inside my head saying …

Wait a minute. That voice isn’t inside my head. It’s just my resident six-year-old announcing that she only wants to eat pasta with tomato sauce at nonna’s. Fine. I can’t say I blame her. The meatballs my mother makes to accompany her homemade spaghetti are worth the drive. My Better Half assures me that he’ll eat everything I make. Hmmmm. Right answer, but suspicious all the same.

Here’s the problem. Our lives have become so busy that there isn’t always time to plan quick and interesting (dare I say, gourmet?) weeknight dinners. Hence the big question: what do you do?

My solution? There are so many recipes that fall under that category on this site and in the many cookbooks that have been piling up in my “cookbook bins.” I will sift through them all in the hopes of increasing my repertoire of go-to recipes. I’ll keep you posted…
