100 chefs were asked what they think the popular food trends of 2012 will be. African cuisine, black garlic and gluten-free beer top the list of up-and-coming menu trends. Although the first two are new to the list, gluten-free food and drink has been on the trend radar for a few years. Given the health issues that many people experience when they eat gluten, the trend is really not surprising. It demonstrates that chefs are keeping abreast of consumer needs.
