Day 4 – Canada Day Planner
There are just three days until the Canada Day Weekend. Last week, I gave you recipes for an array of tasty cocktails that should keep you refreshed and your tastebuds happy. This week I’m going to ply you with a few great recipes that will result in a perfectly delicious weekend.
I’m thinking that the last thing you want to do over the Canada Day weekend is spend the days slaving over the stove in an effort to create an elaborate meal of seven courses. Even I who love spending quality time with my kitchen appliances would rather ditch their company on this weekend for more interesting conversations with friends and family.
On that note, then, I’m going to give you some recipes that are quick and easy to make, but taste like you were tied to the kitchen.
Grilled Lime-Chili Pork Loin
This recipe is roasted on a barbecue spit. Or, slide it into the oven, if that's more to your liking. It will turn out tasty regardless.
Ingredients
- 3 dried chipotle chilies, stemmed and seeded
- 1/2 cup onions, chopped
- 4 cloves, garlic, chopped
- Zest of 1 lime
- Juice of 1/2 lemon
- 1/2 tsp each ground cinnamon, salt and pepper
- 1 2lb pork loin
Instructions
- 1. Place chipotle in hot water, and let sit until soft (at least 15 minutes). Remove stems. Cut open, and remove seeds. Chop chipotle into small pieces.
- 2. Place soaked chilis and its soaking water, onions, garlic, zest, juice, cinnamon, salt and pepper in the bowl of a food processor. Blend until smooth.
- 3. Place pork loin in a container. Pour chili mixture over it; turning pork until it's well covered in the marinade. Place in the refrigerator and let marinate over night.
- 4. Thread the pork loin on the spit, and cook until it reaches an internal temperature of 150°F.
- 5. Or, preheat oven to 350°F, and roast in the oven for 20-30 minutes per pound.
Drink Suggestion:
Serve with Modelo Especial Mexican beer.
