Roast ‘Em

Roasting sweet potatoes is a time honoured tradition. Usually chefs – both professional and at-home – pair the sweetness of the potato with something even sweeter (I’m looking at you candied sauces). I don’t have a sweet tooth, so instead I opt to add a sharpness with onions or cheese, complementing the sweet potato flavour in an outstanding way.
