Roasting eggplant transforms it from soft and spongy to crispy and tender. It’s easy – all you need is a hot oven, a drizzle of olive oil and a bit of S&P. Try this Roasted Eggplant recipe from the Food Network.

Roasted Eggplant

1 eggplant, cut into 1 inch circles
3 tbsp vegetable oil
Salt and pepper

Preheat oven to 400°F and line a baking tray with parchment paper.
Place eggplant pieces on baking tray and pierce with a fork.
Drizzle oil over eggplant, season with salt and pepper.
Roast in oven until eggplant is slightly caramelized and tender, approximately 20 minutes.
