When you think “eggplant”, what’s the first thing that comes to mind? The colour purple? The Levantine dip Baba ghanoush? It’s possible that the words “delicious” and “snack-worthy” are far from your mind.

Eggplant is a tricky ingredient. Soft textured and often slightly bitter, it may surprise you that, when well prepared, eggplant is quite tasty. Here are four ways you can cook up this jewel-toned vegetable to add a bit of variety (and flavour) to your meals!
