Jenner’s Gems

Jenner Cormier, the mastermind mixologist at The Middle Spoon in Halifax, sent Tidings four more original cocktails. (See his other tasty creations within the pages of the current Tidings Magazine May/June 2012.) Jenner has a long history of creating winning cocktail recipes. In 2011, he won the coveted People’s Choice Award at the Made With Love cocktail competition.

Try these yourself, and let Jenner know what you think of them.

For the Troops

1/2 oz fresh grapefruit juice
1/2 oz fresh pineapple juice
0.75 oz agazve & black peppercorn syrup
1 dash grapefruit bitters
1 dash mole bitters
1 oz honey bourbon
0.75 oz tequila (aged preferred)
0.5 oz B&B
1 egg white

Shake hard, double strain into a chilled coupe glass, and garnish with
cracked allspice.

Germain Sour

1 oz fresh lime juice
1 oz vanilla and peppercorn simple syrup
1.5 oz st germain
1 egg white
fresh cucumber – 3-4 slices

Shake hard and single strain into a lavender water rinsed glass over ice,
garnish with 2 slices of cucumber.

Garden Collins

2 cilantro sprigs
3 slices of cucumber
1 oz fresh lime juice
1 oz dill and wormwood simple syrup
2 oz gin

Shake hard and double strain over ice in a collins glass, garnish with a
sprig of cilantro and a cucumber slice

Mary’d Julep

12-14 mint leaves
1 mint sprig for garnish
1 oz rosemary apricot simple syrup
3 sprigs lemon balm
1 sprig rosemary
2 oz top shelf bourbon

Lightly bruise mint leaves and 1 sprig of lemon balm in bottom of glass;
fill halfway with ice. Add 1 oz bourbon and 1/2 oz simple syrup; add rest
of ice. Add rest of bourbon and syrup, and garnish with lemonbalm sprigs
and mint sprig. Serve with straw(s).
