#FridayCocktail – Spring Fever
Ok, so it’s not spring yet. In fact, in some parts of this great country, it feels more like mid-January. But fear not, the official start to the new season is only 3 weeks away and for those of us with children, spring break is upon us! What better way to celebrate than to whip up a favourite summer cocktail and dream of the warmer days to come. My #1 choice – a frozen Piña Colada!
½ cup pineapple juice
¼ cup light rum
1 tablespoon simple syrup
2 handfuls of ice
Pineapple wedges (or spears) for garnish
In a blender, combine coconut milk, pineapple juice, rum, syrup and ice. Blend until smooth. Pour into Hurricane glasses, garnish with fresh pineapple and serve immediately.
