#FridayCocktail: Pineapple Pleasure

I love pineapple. In fact, it’s not the beach, warm weather or crystal clear sea I look most forward to when travelling to the Caribbean – it’s the fresh pineapple at breakfast and all those delicious pineapple inspired beverages. If you love this tropical fruit as much as I do, you will not be disappointed with this Pineapple Pleasure:

INGREDIENTS

60ml (2 oz) pineapple-coconut rum

15 ml (½ oz) Grand Marnier

Fresh lime juice – ½ lime

¼ cup of fresh pineapple chunks

1 tsp of sugar syrup – our recipe calls for ¾ water, ¼ sugar

Ginger ale

PREPARATION

In a Collins glass, muddle your pineapple, leaving a chunk for garnish.

Fill the glass with ice.

In an ice filled cocktail shaker, combine rum, Grand Marnier, lime juice and sugar water. Shake and strain into glass.

Top with ginger ale and garnish with remaining pineapple chunk.
