#FridayCocktail – Banana Daiquiri

As much as I hate to face the reality of another summer coming to an end, the cooler evenings and shorter days are hard to ignore. With only a few short weeks of warm, summer weather left to enjoy, I find myself taking full advantage of every last day. So, although memories of a great glass of red in front of a crackling fire do invoke some happy thoughts, I want to enjoy a few more delicious, cold, tropical inspired cocktails while sitting by the pool. This is one of my all-time favourite frozen drinks:

Ingredients

4 oz of white rum (substitute with a spiced rum for a completely different flavour profile)

2 oz of banana liqueur

Fresh lime juice – 1 lime

1 banana – peeled

2 cups of ice

Preparation

Put all the ingredients in a blender and blend until smooth.

Serve in a Margarita glass.

Serves 2

Garnish idea: Slice a banana with the peel on. Cut a small line from edge to center and use as your garnish (as you would a slice of lime) on the rim of your glass.
