The cool Casablanca sea breeze conserves aromas, flavours and acidity, while wild yeast fermentation and “sur-lie” aging generate complexity. Partial malolactic fermentation adds mouthfeel. The result: spicy caramel, tropical fruit, toasty oak, creamy texture, clean finish. Seafood friendly.
