The old-vine grapes from their Santa Isabel Vineyard were treated to 100% barrel fermentation, but no malolactic fermentation. So, this means full-bodied complexity and toasty smokiness, but with elegant acidity. Bushels of apples, pears and lemons gush forth. A match for lobster bisque.
