I’ve no doubt mentioned before that my favourite breakfast is a hot cup of black coffee accompanied by something sweet and carb laden. There’s nothing like sugar the get your blood pumping in the morning.

Ok, so it’s a given that starting the day with dessert isn’t exactly the best idea. Lucky for me, I’ve found something else that’s very yummy indeed. In an effort to research an upcoming article on ‘free-from’ cuisine for Tidings Magazine‘s April issue, I came across elanaspantry.com. Elana’s been perfecting the art of cooking for specialty diets for a long time. That experience comes through in tasty ways in her recipes.

I was looking for something that satisfied my sweet tooth and yet was packed full of protein (an especially good way to start the day) and lots of other good stuff, like chocolate and fruit … ok, vitamins and minerals, too. I found it in her porridge recipe. The recipe below is differs from Elana’s because I needed it to suit my own tastes. Now, I’ve made up a whole batch that I keep stored in an airtight glass jar. Most mornings, this is my go-to hot and healthy breakfast.

Better-Than-Oatmeal Porridge

1/4 cup blanched almond meal/flour (You can make your own by grinding whole, blanched almonds in a coffee grinder.)

1 Tbsp flax seeds, ground

1 Tbsp chia seeds, ground

1 Tbsp pumpkin seeds, ground

1 tsp cinnamon

1 tsp honey, or to taste

Pinch of salt

Boiling water

1. Grind all the seeds and nuts together until they reach the consistency of meal.

2. Add salt and cinnamon to the meal mixture.

3. Slowly pour 3/4 cup to 1 cup boiling water (or milk) over the meal mixture, stirring constantly until thick and creamy. Elana uses a Vitamix to blend it all together. I originally used a food processor, but found that the porridge cooled off too much.

4. Top with a handful of cocoa nibs and chopped fresh fruit.
