Chocolate Cabernet Sauvignon Icewine Cake

Chef Justin Downes of The Restaurant at Vineland Estates Winery in Vineland, Ontario loves to challenge people who claim to dislike icewine to a taste of the winery’s 2008 Cabernet Sauvignon Icewine. “When I introduce them to [it], especially when it is integrated with food, they quickly change their minds.” Understandable, of course. Icewine is so much more than just sweet. It’s so much more than simply a dessert wine, too (even though I’m presenting a dessert to you now). When pairing icewine with dessert, make sure to drink it with something that is less sweet than the wine. That’s wine dark chocolate makes such a perfect match. The sweetness of the wine actually pulls out the underlying nuances of the chocolate whether it’s nuttiness, bitterness or even a very subtle sweetness. The dark chocolate will, in turn, bring out the fresh fruit aromas and flavours present in the icewine.

Chocolate Cabernet Sauvignon Icewine Cake

3/4 cup Cabernet Sauvignon Icewine
24 oz butter
1 tsp vanilla
16 oz dark chocolate
2 cups sugar
1/4 tsp salt
12 eggs

1. In a medium sized pot, combine cabernet sauvignon icewine, butter, sugar, vanilla, salt and melted chocolate. On medium heat, bring the mixture up to a soft boil. Whisk all of the eggs and “temper” the hot mixture into the eggs. (This is done by pouring just a little of the mixture into the eggs and whisking. This allows the hot mixture to integrate into the eggs without making scrambled eggs.) Do this procedure over and over until the hot mixture and the eggs are completely combined.

2. Pour onto a parchment-lined baking sheet. Bake at 350°F for 15 minutes, or until mostly set. (It should still jiggle in the middle.) Chill for at least 2 hours. Invert pan onto parchment paper. Using a knife or a cookie cutter, cut into portions and enjoy with your favourite preserve.
