Hungry, yet? The Canada Day weekend is only three days away. Hopefully, the weather will improve dramatically this coming weekend and the rain will stay away until at least later in the week. Maybe it hasn’t been raining almost constantly, but it has sure felt that way.

Let’s forget about it. SunFocus instead on how much fun this weekend will be. Wait, did I hear you say, “picnic”. For sure, that’s a fun way to celebrate Canada’s 146th birthday. Even if you’re not trekking out to a park near or far, I’ve got the perfect recipe for you – Orzo with Mint and Tomatoes. Served warm or at room temperature, the salad makes the most of seasonal produce. Simple enough that you won’t have to spend too much time in the kitchen, delicious because you’re using the freshest, best-tasting ingredients. The end result is going to garner you lots of complements; so prepare yourself by having a few simple answers ready, like “Oh, it’s a treasured family heirloom.” And, of course, it will become just that.

Orzo With Mint and Tomatoes

Serves: serves 10

Sauté the onions one day before, if you'd like. If the finished dish loos dry, add broth a little at a time until it's as moist as you prefer.

Ingredients

  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 3 c orzo pasta
  • 1/2 cup chicken broth, or more as needed
  • 1/3 cup lemon juice
  • 1/3 cup parsley
  • 2 tomatoes, cored, seeded and chopped
  • 1/2 cup fresh mint leaves, minced
  • Salt
  • Pepper

Instructions

  1. Sauté onion in olive oil over medium-high heat until soft, about 15 minutes.
  2. Cook the orzo in a large pot of boiling, salted water according to package directions.
  3. In a large bowl, combine cooked orzo, onions, broth, lemon juice and parsley. Blend well. Add tomatoes and mint just before serving. Season to taste with salt and pepper, adding more broth if necessary.

Drink Suggestion:

Pour glasses of Sauvignon Blanc.
