4 vegetable noodle recipes to try at home: Infographic

Vegetables make great noodles. No really, they do. They’re gluten-free and vegan, making them a doable alternative to pasta for people with dietary concerns or restrictions; they’re also healthy, for those of us who are trying to cut back on calories without sacrificing taste.

Vegetable noodles are exactly what they sound like – noodles made from vegetables, rather than the traditional pasta ingredients. Eugene Feygin, SEO Program Manager at Café Quill, home chef and photographer put together an infographic as a convenient visual aid to help ease us into veggie noodles.

“Just about any vegetable works,” he writes. “But we like zucchini, carrots, butternut squash, sweet potatoes, and turnips.”

In fact, there are already some fun names for these, depending on the veggie you use:

  • Zoodles (zucchini)
  • Poodles (parsnip)
  • Swoodles (sweet potato)
  • Toodles (turnip)
  • Coodles (carrot)
  • Sqoodles (squash)
  • Boodles (broccoli stems)

One caveat though: the taste and texture won’t quite be the same as your usual pasta. “We’re not going to tell you that veggie-based noodles will taste just like the real thing,” writes Feygin. “But if your goal is to eat healthier this year, swapping traditional noodles for veggie ones is a great way to cut calories and increase your daily vegetable intake.”
