Partial whole-bunch pressing retains elegance. Partial old-barriques fermentation adds complexity. Partial on-the-lees aging contributes subtle creaminess. Yet, all this fussing does not take away any of the Sauv Blanc freshness and citrusy character. Ready for pan-seared scallops with toasted hazelnut and cured pancetta crisp.
