#FridayCocktail – For the Love of a Virgin

I rarely do virgin –I live a fairly healthy lifestyle but I do love my guilty pleasures, including a good cocktail at the end of a bad day. But, I am running a marathon this weekend so I have been dry for two weeks. It hasn’t been easy with the onset of warm weather and the onslaught of social activities. So, it got me searching for some good virgin options – something more than the  “can you make that a virgin” option. This has been my favourite, by far:

 

Virgin Chai

(serves 2)

 

Ingredients

1 chai tea bag

2 lemon wedges

2 star anise pods

6 ounces club soda

¼ fresh lime juice

¼ sugar

 

Preparation

Boil a ½ cup of water.

Remove from heat and add tea bag.

Cover and let sit for 10 minutes.

Add sugar; stir to dissolve.

Remove tea bag and allow water to cool.

Pour the tea mixture into a cocktail shaker and add lime juice.

Shake and strain into rock glasses filled with ice.

Top glasses with club soda.

Add a star anise and a lemon wedge to each glass.
