#FridayCocktail – Green as Spring

As I stare out my office window at the bright green grass that has begun to push through, I am reminded that this beautiful vibrant shade is so indicative of spring. It’s not the same as a summer green or an autumn green; all the new vegetation has an almost florescent quality. Perhaps it is just the contrast to the muted colours of winter but, it is nonetheless, breathtaking. Here’s a cocktail that tries to capture the essence of spring green.

 

Ingredients

2 slices of a peeled cucumber

1 slice of an unpeeled cucumber (for garnish)

1 ½  ounces of gin

½ ounce of absinthe

1 ounce of freshly squeezed lemon or lime juice

½  ounce of simple syrup

Chilled tonic water

Ice

 

Preparation

In a cocktail shaker, muddle the peeled cucumber.

Add absinthe and gin and let them get acquainted (about 30 seconds).

Add lemon/lime juice, simple syrup and fill with ice.

Shake well and strain into any tall glass.

Top with tonic.

Add unpeeled cucumber as garnish.
