#FridayCocktail – Coconut Creek Concoction

I was in Florida last weekend to celebrate my birthday and enjoy a much needed break from the realities of life. My travelling companion – a professional restaurateur with an equally crazy life – and I made a pact to try and enjoy some real down time, out of the restaurant and bar scene. So, we hit the grocery and liquor stores and got going on a great night in, preparing a delicious meal and getting our drink on. We were on vacation after all, and although perfectly willing to sacrifice the whole scene on the strip, we both needed our tropical drink fix. I left the mixing magic up to my very capable sidekick who has spent a large portion of his professional life behind a bar. He did not disappoint. Here’s the basic recipe – adjust to your own personal taste and free pour away!

 

Ingredients

Makes 2 drinks

4 ounces Malibu Coconut Rum

2 ounces of any non-alcoholic Piña Colada mix

4 ounces of pineapple juice

Fresh pineapple wedges

Ice

 

Preparation

Fill a glass of your choice (we used lowball glasses) with ice.

In a cocktail shaker, also filled with ice, add rum, Piña Colada mix and pineapple juice.

Shake vigorously for 30 seconds and pour into glasses.

Garnish with pineapple wedge.
